Beetroot velouté

INGREDIENTS

2 organic red beets
100 cl coconut milk
1/2 lime
A bunch of coriander
A few cashew nuts
2 tablespoons toasted sesame oil

 

PREPARATION

Step 1:

In a blender, blend the cooked and peeled beet . Add coconut milk, lime juice and toasted sesame oil.

Step 2:

Ladle the velouté into ramekins or glasses, then add a few coriander leaves and the cashew nuts.
